Kale
Madeley – Heirloom. Luscious, large, round leaves that are dark green. A great choice for stuffing and rolling up. This kale is the PERFECT substituent for spinach. Ultra tender and sweet, it is our standard for creamed ‘spinach’ when spinach is not at hand. Cooks to a deep green. Silky smooth and delicious.
Tuscan- Italian heirloom. Very delicious and sweet. Dark green and crinkly.
Leeks
Bulgarian Giant – Stunning leeks. Very long and thick stalks. Deliciously sweet. Our new favorite.
Lettuce
Lettony – Large, open heads. Frilly leaves.
Red Flame – Large, loose heads are green in the center and red on the edges. Slightly crinkly. Very tender and sweet. Adds fun color to your salads.
Red Romaine – A small romaine head. Mostly dark red with green undertone.
Tintin – Crisp and sweet. A romaine variety.
Winter Density – A cross between a butter-head and romaine. Good flavor. Tight, upright heads.
Mushrooms
Shiitake – These are homegrown on our inoculated logs. Meaty and stunning in flavor. You can’t beat these with any store bought variety.
